Ingredients

  • sweet potatoes – 4 medium / 600 g
  • coconut milk – 2 cups / 480 ml
  • spinach – 2 cups / 60 g
  • onion – 1 medium / 150 g
  • ginger – 1 inch piece, grated / 15 g
  • garlic – 3 cloves, minced
  • vegetable oil – 2 tablespoons / 28 ml
  • lime juice – 2 tablespoons / 30 ml
  • cilantro – 1/4 cup, chopped / 10 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Peel and dice the sweet potatoes into small cubes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger and sauté until the onion is translucent.
  3. Add the sweet potatoes to the pot and stir to coat with the aromatics.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer.
