Kadhi is a delicate and tangy yogurt-based curry originating from the western regions of India, particularly Gujarat and Rajasthan. This stew is a staple comfort dish celebrated for its tangy flavors, brought to life with the unique taste of gram flour fritters immersed in yogurt sauce. Ingredients

  • Yogurt – 2 cups / 480 ml
  • Gram flour (Besan) – 1/2 cup / 60 g
  • Water – 2 cups / 480 ml
  • Turmeric powder – 1/2 tsp / 2 g
  • Ginger paste – 1 tsp / 5 g
  • Green chilies (chopped) – 2
  • Curry leaves – 10-12 leaves
  • Mustard seeds – 1 tsp / 5 g
  • Cumin seeds – 1 tsp / 5 g
  • Fenugreek seeds – 1/2 tsp / 2 g
  • Asafoetida – A pinch
  • Salt – To taste
  • Oil – 2 tbsp / 30 ml

Instructions

  1. In a large bowl, whisk the yogurt, gram flour, turmeric powder, and water until smooth and lump-free.
  2. Heat the oil in a deep pan and add mustard seeds, cumin seeds, fenugreek seeds, green chilies, and curry leaves. Fry until the seeds crackle.
  3. Add the ginger paste and a pinch of asafoetida, then sauté briefly.
  4. Pour in the yogurt mixture while continuously stirring to prevent curdling.
  5. Simmer the kadhi on low heat for about 15-20 minutes, stirring occasionally until it thickens. Season with salt.
  6. Serve hot over steamed rice or with roti.
