Ingredients

  • lamb leg, boneless – 2 pounds / 900 g
  • onion, grated – 1 large / 150 g
  • yogurt, plain – 1/2 cup / 120 ml
  • lemon juice – 1/4 cup / 60 ml
  • saffron threads – 1/2 teaspoon
  • salt – 1 teaspoon
  • black pepper, ground – 1 teaspoon
  • olive oil – 2 tablespoons / 30 ml
  • garlic cloves, minced – 3 cloves

Instructions

  1. Cut the lamb into 2-inch cubes.
  2. In a large bowl, mix grated onion, yogurt, lemon juice, saffron, salt, pepper, olive oil, and minced garlic to create the marinade.
  3. Add lamb pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated lamb onto skewers, leaving some space between each piece to cook evenly.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the lamb is charred and cooked to your liking.
  7. Serve with rice or flatbread and garnish with fresh herbs.
