Ingredients
- dried white beans – 1 lb / 450 g
- olive oil – 3 tbsp / 45 ml
- onion – 1 large, chopped
- garlic cloves – 4, minced
- carrots – 2 large, diced
- celery stalks – 2, diced
- tomato paste – 2 tbsp / 30 g
- bay leaves – 2
- water – 8 cups / 1.9 liters
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2.5 g
- fresh parsley – 1/4 cup / 15 g, chopped
Instructions
- Soak the beans overnight in a large bowl of water. Drain and rinse before cooking.
- In a large pot, heat olive oil over medium heat. Add the chopped onion, and sauté until translucent, about 5 minutes.
- Stir in the garlic, carrots, and celery. Cook for another 3 minutes until the vegetables begin to soften.
- Add the tomato paste and bay leaves, stirring for 1-2 minutes to coat the vegetables.
- Introduce the soaked beans into the pot and add the water. Bring to a boil, then lower the heat to simmer.
- Simmer uncovered for 1.5 to 2 hours, or until the beans are tender and the soup has thickened.
- Season with salt and black pepper to taste. Remove bay leaves before serving.
- Garnish with fresh parsley and serve hot, with crusty bread if desired.
