Ingredients

  • goat meat – 2 lbs / 900 g
  • curry powder – 3 tbsp
  • allspice – 1 tsp
  • onion, chopped – 1 large
  • scotch bonnet pepper, minced – 1
  • garlic cloves, minced – 3
  • ginger, minced – 1 tbsp
  • thyme – 1 tsp
  • cumin – 1 tsp
  • potatoes, cubed – 2 large
  • carrots, sliced – 2
  • coconut milk – 1 cup / 240 ml
  • vegetable oil – 2 tbsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, ginger, and scotch bonnet pepper and sauté until onions are translucent.
  3. Add curry powder, allspice, thyme, and cumin. Cook for 2 minutes until fragrant.
  4. Add the goat meat and brown on all sides.
  5. Pour in the coconut milk. Season with salt and black pepper.
  6. Add potatoes and carrots; stir to combine.
  7. Lower heat and cover. Simmer for about 1.5-2 hours, stirring occasionally, until meat is tender.
  8. Adjust seasoning if necessary and serve hot.
