Jagacida is a comforting, hearty meal often enjoyed by families gathered around the table, celebrating the simple yet profound complexity of flavors that come from using modest ingredients.

Ingredients

  • Olive oil – 2 tbsp / 30 ml
  • Onion, finely chopped – 1 medium / 150 g
  • Garlic cloves, minced – 3 cloves / 10 g
  • Bay leaf – 1
  • Smoked paprika – 1 tsp / 2 g
  • White rice – 1 cup / 200 g
  • Lentils – 1 cup / 200 g
  • Water or chicken broth – 2 ½ cups / 600 ml
  • Salt – to taste
  • Black pepper – to taste
  • Parsley, chopped – 2 tbsp / 8 g for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in minced garlic, bay leaf, and smoked paprika. Cook for another minute until fragrant.
  4. Add the rice and lentils, stirring well to coat with the spices and oil.
  5. Pour in the water or broth, season with salt and pepper, and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 20 minutes until the rice and lentils are cooked through and tender.
  7. Remove from heat and let it sit for 5 minutes. Fluff the rice with a fork.
  8. Garnish with chopped parsley before serving.
