Ingredients

  • Istrian Ombolo (pork loin) – 500 g / 1.1 lbs
  • Sausages (Kranjska or similar style) – 400 g / 0.88 lbs
  • Sauerkraut – 750 g / 1.65 lbs
  • Onion – 1 large, chopped
  • Garlic cloves – 2, minced
  • Bay leaf – 1
  • Caraway seeds – 1 tsp
  • Peppercorns – 10
  • Olive oil – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Heat olive oil in a large ovenproof pot over medium heat and add the onions. Sauté until softened and translucent.
  3. Add minced garlic, caraway seeds, bay leaf, and peppercorns. Stir for 1 minute until fragrant.
  4. Stir in the sauerkraut, season with salt and pepper, then place the pot-simmered mixture in the pre-heated oven for 30 minutes.
  5. In the meantime, preheat a grill pan and cook the Ombolo and sausages until lightly browned on the outside.
  6. Once the sauerkraut has cooked, lay the browned sausages and Ombolo on top. Cover and return to the oven for another 20 minutes, allowing the flavors to meld.
  7. Serve hot, ensuring each plate receives a generous portion of both meat and sauerkraut.
