- eggs – 2 large
- vanilla extract – 1 teaspoon
- lemon zest – 1 tablespoon
- salt – 1/2 teaspoon
- vegetable oil for frying – as needed
- powdered sugar for dusting – as needed
Instructions
- In a large mixing bowl, combine the warm milk and yeast. Let sit for 5 minutes until foamy.
- Add sugar, eggs, melted butter, and vanilla extract to the yeast mixture. Stir until well combined.
- Gradually mix in flour, lemon zest, and salt until a smooth batter forms. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
- Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Using two spoons, gently drop tablespoons of batter into the hot oil. Fry until golden brown on all sides, about 3-4 minutes.
- Remove fritule from the oil and drain on paper towels. Dust with powdered sugar before serving.
