Ingredients
- fresh spinach – 1 lb / 450 g
- walnuts – 1 cup / 120 g
- garlic cloves – 2 large
- fresh cilantro – 1/4 cup / 15 g
- red wine vinegar – 2 tbsp / 30 ml
- ground coriander – 1 tsp / 2 g
- fenugreek seeds – 1/2 tsp / 1 g
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 1 g
Instructions
- In a large pot, bring water to a boil and blanch the spinach for 2 minutes. Drain and rinse with cold water. Squeeze out as much moisture as possible.
- In a food processor, pulse walnuts, garlic, and fresh cilantro until finely chopped.
- Add the drained spinach, red wine vinegar, ground coriander, fenugreek seeds, salt, and black pepper. Blend until smooth and well-combined.
- Adjust seasoning if necessary and chill in the refrigerator for at least an hour before serving.
- Serve the pkhali on a platter, garnished with walnut halves or pomegranate seeds if desired.
