Ingredients
- ground lamb or beef – 500 g / 1 lb
- onion, finely grated – 1 large
- garlic cloves, minced – 3 cloves
- breadcrumbs – 1/2 cup / 60 g
- ground cumin – 1 tsp
- ground paprika – 1 tsp
- fresh parsley, chopped – 1/4 cup / 15 g
- salt – 1.5 tsp
- black pepper – 1/2 tsp
- olive oil – 3 tbsp
- beef or chicken broth – 2 cups / 480 ml
- sliced stale bread – 4 slices
- sumac – 1 tsp
Instructions
- In a large bowl, combine the ground meat, grated onion, minced garlic, breadcrumbs, cumin, paprika, parsley, salt, and pepper. Mix until well blended.
- Shape the mixture into small patties about the size of your palm.
- Heat olive oil in a large skillet over medium heat. Sear the patties for 2-3 minutes on each side until they are browned. Remove and set aside.
- In the same skillet, pour in the broth and bring to a simmer. Add the bread slices and soak them briefly in the broth, allowing them to absorb the flavors.
- Serve the köfte on top of the soaked bread slices. Dust with sumac before serving.
