Ingredients
- Salt-cured codfish (stocco) – 500 g / 1.1 lbs
- Cherry tomatoes – 200 g / 7 oz, halved
- Red onion – 1 medium, thinly sliced
- Green olives – 100 g / 3.5 oz, pitted
- Extra virgin olive oil – 4 tbsp
- Fresh parsley – A handful, finely chopped
- Lemon juice – Juice of 1 lemon
- Salt – To taste
- Black pepper – To taste
Instructions
- Soak the salt-cured codfish in cold water for 24 hours, changing the water every 6 hours to remove excess salt.
- Once desalted, cut the codfish into bite-sized pieces.
- In a large bowl, combine the codfish, cherry tomatoes, red onion slices, and green olives.
- Drizzle with olive oil and lemon juice, then sprinkle with chopped parsley, salt, and black pepper.
- Toss gently to combine all ingredients thoroughly.
- Allow the salad to marinate for at least 1 hour in the refrigerator before serving.
