Ingredients

  • Salt-cured codfish (stocco) – 500 g / 1.1 lbs
  • Cherry tomatoes – 200 g / 7 oz, halved
  • Red onion – 1 medium, thinly sliced
  • Green olives – 100 g / 3.5 oz, pitted
  • Extra virgin olive oil – 4 tbsp
  • Fresh parsley – A handful, finely chopped
  • Lemon juice – Juice of 1 lemon
  • Salt – To taste
  • Black pepper – To taste

Instructions

  1. Soak the salt-cured codfish in cold water for 24 hours, changing the water every 6 hours to remove excess salt.
  2. Once desalted, cut the codfish into bite-sized pieces.
  3. In a large bowl, combine the codfish, cherry tomatoes, red onion slices, and green olives.
  4. Drizzle with olive oil and lemon juice, then sprinkle with chopped parsley, salt, and black pepper.
  5. Toss gently to combine all ingredients thoroughly.
  6. Allow the salad to marinate for at least 1 hour in the refrigerator before serving.
