Inchicapi is a traditional and hearty chicken soup hailing from the Peruvian Amazon. Ingredients

  • chicken – 1 whole / about 1.5 kg, cut into pieces
  • water – 8 cups / 1.9 liters
  • peanuts – 1 cup / 150 g, ground
  • yuca (cassava) – 500 g, peeled and diced
  • cilantro – 1 bunch, chopped
  • garlic – 4 cloves, minced
  • onion – 1 medium, finely chopped
  • aji amarillo paste – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, add the chicken pieces and water. Bring to a boil over medium-high heat, skimming off any foam that rises to the surface.
  2. Reduce the heat to a simmer and cook for 30 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and set aside to cool slightly. Once cool enough to handle, shred the meat and discard the bones.
  4. In the same pot, add the yuca, garlic, onion, ground peanuts, and aji amarillo paste. Season with salt and black pepper.
  5. Continue to simmer until the yuca is tender, approximately 25 minutes.
  6. Return the shredded chicken to the pot and stir in the chopped cilantro. Adjust seasoning as needed.
  7. Serve hot, garnished with additional cilantro, if desired.

  • aji amarillo paste -> paprika with a pinch of cayenne
  • peanuts -> almonds
