İmam Bayıldı, a charming and legendary dish from the rich tapestry of Ottoman cuisine, translates to ‘The Imam Fainted,’ named such for its irresistible flavors that supposedly caused an imam to swoon. Traditionally a summer dish, it celebrates the abundance and depth of Mediterranean flavors with the combination of silky eggplants, sweet tomatoes, and aromatic herbs simmered together to create a vegetarian marvel. Its origins lie deeply rooted in Turkish culture, where it is revered as a staple of mezze spreads and a testament to Ottoman culinary ingenuity.
Ingredients
- Eggplants – 4 medium
- Olive oil – 1/2 cup / 120 ml
- Onions – 2 large, sliced
- Garlic – 4 cloves, minced
- Ripe tomatoes – 4 large, diced
- Sugar – 1 teaspoon
- Salt – to taste
- Black pepper – to taste
- Parsley – 1/2 cup / 15 g, chopped
- Lemon juice – 2 tablespoons
Instructions
- Slice eggplants in half lengthwise and scoop out the flesh, leaving a shell about 1 cm thick. Reserve the flesh.
- Sprinkle eggplant shells with salt and let them sit for 30 minutes to draw out bitterness. Rinse and pat dry.
- In a large pan, heat olive oil and sauté onions and garlic until soft and translucent.
- Add diced tomatoes, reserved eggplant flesh, sugar, salt, and black pepper. Cook until tomatoes break down, about 10 minutes.
- Preheat oven to 350°F (175°C).
- Fill eggplant shells with the tomato mixture and place them in a baking dish.
- Drizzle with lemon juice, cover, and bake for 1 hour, until eggplants are tender.
- Garnish with chopped parsley before serving.
