İmam Bayıldı, a charming and legendary dish from the rich tapestry of Ottoman cuisine, translates to ‘The Imam Fainted,’ named such for its irresistible flavors that supposedly caused an imam to swoon. Traditionally a summer dish, it celebrates the abundance and depth of Mediterranean flavors with the combination of silky eggplants, sweet tomatoes, and aromatic herbs simmered together to create a vegetarian marvel. Its origins lie deeply rooted in Turkish culture, where it is revered as a staple of mezze spreads and a testament to Ottoman culinary ingenuity.

Ingredients

  • Eggplants – 4 medium
  • Olive oil – 1/2 cup / 120 ml
  • Onions – 2 large, sliced
  • Garlic – 4 cloves, minced
  • Ripe tomatoes – 4 large, diced
  • Sugar – 1 teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Parsley – 1/2 cup / 15 g, chopped
  • Lemon juice – 2 tablespoons

Instructions

  1. Slice eggplants in half lengthwise and scoop out the flesh, leaving a shell about 1 cm thick. Reserve the flesh.
  2. Sprinkle eggplant shells with salt and let them sit for 30 minutes to draw out bitterness. Rinse and pat dry.
  3. In a large pan, heat olive oil and sauté onions and garlic until soft and translucent.
  4. Add diced tomatoes, reserved eggplant flesh, sugar, salt, and black pepper. Cook until tomatoes break down, about 10 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Fill eggplant shells with the tomato mixture and place them in a baking dish.
  7. Drizzle with lemon juice, cover, and bake for 1 hour, until eggplants are tender.
  8. Garnish with chopped parsley before serving.
