Iločki ćevap is a beloved meat dish originating from the picturesque town of Ilok in Croatia, famed for its rich traditions and hearty cuisine. Ingredients
- ground beef – 500 g / 1.1 lb
- ground lamb – 250 g / 0.55 lb
- onion, finely chopped – 1 medium / 150 g
- garlic, minced – 3 cloves
- sweet paprika – 2 tsp
- salt – 1.5 tsp
- black pepper – 1 tsp
- baking soda – 1/2 tsp
- sparkling mineral water – 60 ml / 1/4 cup
- olive oil – 2 tbsp
Instructions
- In a large bowl, mix together the ground beef, ground lamb, onion, garlic, sweet paprika, salt, and black pepper.
- Add the baking soda and sparkling mineral water to the mixture and knead well until smooth and well combined. This can take around 5 minutes.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- Preheat a grill or grill pan over medium-high heat and lightly brush with olive oil.
- Shape the meat mixture into small, sausage-like ćevapi, about the length of your finger.
- Grill the ćevapi for about 4-5 minutes on each side, or until cooked through and nicely browned.
- Serve immediately with fresh bread, ajvar sauce, and chopped onions.
