Ingredients
- beef chuck – 1.5 lbs / 680 g
- olive oil – 2 tbsp / 30 ml
- onion – 1 large, diced / 200 g
- carrots – 2 large, sliced / 150 g
- garlic – 4 cloves, minced
- potatoes – 3 medium, cubed / 400 g
- red wine – 1 cup / 240 ml
- beef broth – 4 cups / 960 ml
- bay leaves – 2 leaves
- thyme – 1 tsp / 1 g
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef chuck and brown on all sides. Remove and set aside.
- In the same pot, add the diced onion and sauté until translucent.
- Add garlic and carrots, continue to sauté for another 3-4 minutes.
- Return the beef to the pot. Add the red wine, scraping any browned bits from the bottom.
- Pour in the beef broth, then add potatoes, bay leaves, and thyme.
- Bring to a simmer, cover, and cook on low heat for about 2 hours or until the beef is tender.
- Season with salt and black pepper to taste. Remove bay leaves before serving.
