Ingredients

  • fresh white fish fillets – 1 lb / 450 g
  • coconut milk – 2 cups / 480 ml
  • onion, finely chopped – 1 medium
  • tomatoes, chopped – 2 medium
  • garlic cloves, minced – 3 cloves
  • ginger, grated – 1 inch piece
  • lime juice – 2 tablespoons
  • chilies, sliced – 2 small
  • spinach leaves – 2 cups / 60 g
  • cooking oil – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat oil in a large pan over medium heat. Sauté onions until transparent.
  2. Add garlic and ginger, cooking until fragrant, about 1 minute.
  3. Stir in tomatoes and chilies, cooking until tomatoes begin to soften.
  4. Pour in coconut milk, stir well, and bring to a gentle simmer.
  5. Add fish pieces and cook for 5-7 minutes until fish is just cooked through.
  6. Stir in spinach leaves and lime juice, season with salt and black pepper to taste.
  7. Serve hot over steamed rice.
