Ichlekli, also known as Ichlekli Nan, is a traditional Turkmen dish boasting a rich cultural heritage. This hearty meal features a savory, spiced meat filling enveloped in crispy, golden pastry. Originating from the Central Asian steppes, Ichlekli is a staple at family gatherings and celebrations, symbolizing warmth, generosity, and the simple pleasures of shared food.
Ingredients
- All-purpose flour – 3 cups / 375 g
- Salt – 1.5 tsp
- Water – 1 cup / 240 ml
- Beef or lamb, finely chopped – 500 g / 1.1 lb
- Onion, finely diced – 1 large / 150 g
- Black pepper – 1 tsp
- Vegetable oil – 2 tbsp
Instructions
- In a bowl, mix flour and salt. Gradually add water, kneading into a smooth dough. Cover and rest for 30 minutes.
- In a separate bowl, mix beef or lamb, onion, salt, and black pepper.
- Divide the dough into 4 equal parts. Roll out each into a thin round about 25 cm in diameter.
- Place a quarter of the meat mixture in the center of each round, fold over, and seal the edges.
- Preheat a skillet over medium heat, add oil, and carefully place each Ichlekli. Cook for 15-20 minutes, turning halfway, until both sides are golden brown.
- Serve warm and enjoy the rich, savory flavors!
