This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Originating from the Hawaiian Islands, Huli Huli Sauce is a celebrated marinade and basting sauce that offers a perfect blend of sweet, tangy, and savory flavors. Traditionally used in Hawaii on grilled chicken, the words ‘huli huli’ mean ‘turn turn’ in Hawaiian, referring to the turn of the chicken on the grill. This sauce typically combines the tropical sweetness of pineapple and brown sugar with soy sauce and ginger, creating an unforgettable taste that transports you to the beaches of Hawaii.

Ingredients

  • pineapple juice – 1 cup / 240 ml
  • soy sauce – 1/2 cup / 120 ml
  • brown sugar – 1/2 cup / 100 g
  • ketchup – 1/3 cup / 75 ml
  • rice vinegar – 1/4 cup / 60 ml
  • fresh ginger, grated – 1 tablespoon / 15 g
  • garlic, minced – 2 cloves
  • sesame oil – 2 teaspoons / 10 ml
  • Worcestershire sauce – 1 tablespoon / 15 ml
  • sriracha (optional) – 1 teaspoon / 5 ml

Instructions

  1. In a medium bowl, combine pineapple juice, soy sauce, and brown sugar. Stir until the sugar dissolves.
  2. Add ketchup, rice vinegar, grated ginger, minced garlic, sesame oil, Worcestershire sauce, and sriracha. Mix until well combined.
  3. Transfer the mixture to a saucepan over medium heat. Bring to a simmer and cook for 5 minutes, stirring frequently, until slightly thickened.
  4. Remove from heat and let it cool. Use as a marinade or basting sauce for grilled meats.

Substitutions
