Huachinango a la Veracruzana is a traditional Mexican seafood dish hailing from the coastal region of Veracruz. Ingredients

  • Red snapper fillets – 4 fillets / about 1.5 lbs / 680 g
  • Olive oil – 2 tbsp / 30 ml
  • Lime juice – 2 tbsp / 30 ml
  • Salt – 1 tsp / 5 g
  • Black pepper – 1/2 tsp / 2.5 g
  • Garlic, minced – 4 cloves
  • White onion, chopped – 1 large / about 1 cup / 240 g
  • Tomatoes, chopped – 4 medium / about 2 cups / 480 g
  • Green olives, pitted and sliced – 1/2 cup / 85 g
  • Capers – 2 tbsp / 30 g
  • Bay leaves – 2
  • Chili peppers, sliced – 2
  • Fresh oregano – 1 tsp / 1 g
  • Fresh parsley, chopped – 1/4 cup / 15 g

Instructions

  1. Rinse the red snapper fillets under cold water and pat dry with paper towels. Sprinkle with lime juice, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the garlic and onion and sauté until the onion becomes translucent.
  3. Add chopped tomatoes, olives, capers, bay leaves, chili peppers, and oregano to the skillet. Simmer for 15 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Place the seasoned fish fillets in the sauce, cover, and cook over low heat for about 10 minutes or until the fish flakes easily with a fork.
  5. Sprinkle with freshly chopped parsley before serving.
