Ingredients

  • all-purpose flour – 3 cups / 375 g
  • caster sugar – 1/4 cup / 55 g
  • instant yeast – 2 tsp / 7 g
  • salt – 1/2 tsp
  • milk – 1 cup / 240 ml, warm
  • unsalted butter – 1/4 cup / 56 g, melted
  • large eggs – 2
  • vegetable oil – for frying
  • raspberry jam – 1 cup / 300 g
  • granulated sugar – 1 cup / 200 g, for coating

Instructions

  1. In a large mixing bowl, combine flour, caster sugar, instant yeast, and salt.
  2. Add warm milk, melted butter, and eggs to the dry ingredients. Mix until a dough forms.
  3. Knead the dough on a floured surface for 10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball.
  6. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 180°C (350°F).
  7. Fry the donuts in batches for 2-3 minutes per side until golden brown.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Fill a piping bag with raspberry jam and inject each donut with approximately 2 tbsp of jam.
  10. Toss donuts in granulated sugar to coat them evenly.
