Ingredients
- all-purpose flour – 3 cups / 375 g
- caster sugar – 1/4 cup / 55 g
- instant yeast – 2 tsp / 7 g
- salt – 1/2 tsp
- milk – 1 cup / 240 ml, warm
- unsalted butter – 1/4 cup / 56 g, melted
- large eggs – 2
- vegetable oil – for frying
- raspberry jam – 1 cup / 300 g
- granulated sugar – 1 cup / 200 g, for coating
Instructions
- In a large mixing bowl, combine flour, caster sugar, instant yeast, and salt.
- Add warm milk, melted butter, and eggs to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for 10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball.
- Heat vegetable oil in a deep fryer or heavy-bottomed pot to 180°C (350°F).
- Fry the donuts in batches for 2-3 minutes per side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Fill a piping bag with raspberry jam and inject each donut with approximately 2 tbsp of jam.
- Toss donuts in granulated sugar to coat them evenly.
