Hortobágyi palacsinta is a traditional Hungarian dish, originating from the Great Hungarian Plain, known as the Hortobágy. The palacsinta, or crepe, is stuffed with a savory meat stew, often made from pork or chicken, and is complemented with sweet Hungarian paprika. Ingredients

  • Chicken breast – 500 g / 1 lb
  • Onion – 1 large / 200 g
  • Garlic cloves – 2 cloves
  • Hungarian sweet paprika – 2 tablespoons
  • Flour – 250 g / 2 cups
  • Milk – 500 ml / 2 cups
  • Eggs – 3
  • Oil – for cooking
  • Sour cream – 200 ml / 3/4 cup
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Finely chop the onion and garlic. Sauté them in oil until translucent.
  2. Add the chicken breast, cut into small cubes, and cook until browned.
  3. Sprinkle in the paprika, stir well, and add a little water to avoid burning the paprika.
  4. Simmer the mixture until the chicken is fully cooked and tender.
  5. Meanwhile, prepare the crepe batter by whisking together flour, milk, eggs, a pinch of salt, and a tablespoon of oil.
  6. Heat a non-stick pan over medium heat and cook thin crepes, setting them aside to cool slightly.
  7. Fill each crepe with the chicken mixture, fold it into a parcel, and place in a baking dish.
  8. Mix sour cream with some of the meat sauce and spread it over the crepes.
  9. Bake in a preheated oven at 180°C (350°F) for 20 minutes.
  10. Serve hot, garnished with a dollop of sour cream.
