This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Hoppers, also known as ‘Appam,’ are a type of pancake from South India and Sri Lanka, known for their characteristic bowl shape and crispy edges. Originating in the ancient culinary traditions of these regions, hoppers have become a beloved street food and breakfast staple. Traditionally made with fermented rice batter and coconut milk, they are often paired with spicy curries or coconut sambol to create a delightful contrast of flavors and textures.
Ingredients
- rice flour – 2 cups / 240 g
- coconut milk – 1 cup / 240 ml
- water – 1 cup / 240 ml
- sugar – 1 tsp / 5 g
- dry yeast – 1 tsp / 5 g
- salt – 1 tsp / 5 g
- cooked white rice – 2 tbsp / 30 g
- baking soda – 1/4 tsp / 1 g
- oil (for greasing) – as needed
Instructions
- In a blender, combine rice flour, coconut milk, water, sugar, and cooked rice. Blend until smooth.
- Sprinkle in the yeast and blend briefly. Let the mixture sit for about 2 hours to ferment.
- Once fermented, add salt and baking soda to the mixture, stirring well.
- Heat a small non-stick pan or a traditional hopper pan over medium heat and lightly grease with oil.
- Pour a ladle of batter into the pan, immediately swirl to coat the sides and create a bowl shape.
- Cover the pan partially with a lid and cook until edges are visibly crispy and the center is cooked through, about 2-3 minutes.
- Gently remove the hopper and repeat with remaining batter. Serve warm with curries or sambol.
Substitutions
- coconut milk -> almond milk
- rice flour -> all-purpose flour
Enhancements in the Next Evolution
