Ingredients

  • buckwheat noodles – 400 g / 14 oz
  • fresh sashimi-grade fish (flounder or halibut) – 200 g / 7 oz
  • cucumber – 1, thinly sliced
  • Korean pear – 1, thinly sliced
  • hard-boiled eggs – 2, halved
  • white vinegar – 2 tbsp / 30 ml
  • soy sauce – 2 tbsp / 30 ml
  • sesame oil – 1 tbsp / 15 ml
  • gochujang (Korean red chili paste) – 2 tbsp / 30 g
  • sugar – 1 tbsp / 12 g
  • garlic – 2 cloves, minced
  • ice cubes – as required

Instructions

  1. Cook the buckwheat noodles according to package instructions, rinse in cold water and set aside in the refrigerator.
  2. Prepare the sauce by mixing together the gochujang, soy sauce, vinegar, sugar, sesame oil, and minced garlic in a bowl.
  3. Arrange the noodles into serving bowls. Add ice cubes to keep them extra cold.
  4. Top with slices of fresh sashimi-grade fish, cucumber, and Korean pear.
  5. Drizzle the prepared sauce over the noodles and toppings.
  6. Garnish with half a hard-boiled egg per bowl before serving.
