Hkatenkwan, known widely as Groundnut Soup or Peanut Stew, hails from the deeply rich culinary traditions of Ghana. With its origins deeply rooted among the Akan people, this dish is a heartwarming blend that captures the essence of African culinary artistry. Ingredients
- peanut butter (natural, unsweetened) – 1 cup / 240 g
- chicken thighs (bone-in, skinless) – 2 lbs / 900 g
- tomato paste – 1/4 cup / 60 g
- onion (chopped) – 1 large / 150 g
- ginger (fresh, minced) – 1 tablespoon / 15 g
- garlic cloves (minced) – 3 cloves / 15 g
- vegetable oil – 2 tablespoons / 30 ml
- water – 6 cups / 1.4 L
- salt – 1 tablespoon / 15 g
- black pepper – 1 teaspoon / 5 g
- smoked paprika – 1 teaspoon / 5 g
- bay leaves – 2 whole
Instructions
- Heat oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
- Stir in the minced ginger and garlic, cooking for an additional minute until fragrant.
- Add chicken thighs to the pot, searing on each side until lightly browned.
- Mix in the tomato paste, followed by the peanut butter, stirring continuously to avoid sticking.
- Pour in water slowly, mixing to incorporate the peanut butter thoroughly, until a smooth consistency is reached.
- Season with salt, black pepper, smoked paprika, and add bay leaves. Bring to a boil.
- Reduce heat and let simmer for about 45 minutes, or until chicken is tender and the flavors meld beautifully.
- Remove bay leaves and adjust seasoning to taste before serving.
