Ingredients
- pork shoulder, cubed – 2 lbs / 900 g
- olive oil – 2 tbsp
- onion, chopped – 1 large
- celery stalks, chopped – 8-10
- garlic cloves, minced – 3
- lemon juice – 1/4 cup / 60 ml
- water – 3 cups / 720 ml
- salt – to taste
- black pepper – to taste
- dill, chopped – 2 tbsp
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the cubed pork and brown on all sides. Remove and set aside.
- In the same pot, add the chopped onion and sauté until translucent. Add the garlic and cook for another minute.
- Return the browned pork to the pot. Stir in the chopped celery, lemon juice, and water. Bring to a simmer.
- Season with salt and black pepper. Cover and let it cook on low heat for about 1.5 to 2 hours, or until the pork is tender.
- Stir in the chopped dill before serving for an added fresh aroma.
