Ingredients

  • Turmeric powder – 1 tsp
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Fresh chilies – 2, sliced
  • Lime juice – 2 tbsp
  • Salt – to taste
  • Fresh cilantro – for garnish
  • Vegetable oil – 2 tbsp

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped red onion, garlic, and ginger, sauté until onions are translucent.

  4. Introduce chicken to the pot, and cook until it’s browned on all sides.
  5. Pour in coconut milk and bring the mixture to a gentle simmer.
  6. Add sliced chilies, lime juice, and salt to taste. Let simmer for about 20 minutes until the chicken is cooked through.
