Ingredients

  • Hassar fish – 4 pieces / 800 g
  • Curry powder – 2 tbsp / 15 g
  • Garlic cloves – 4 cloves, minced
  • Onion – 1 large, diced
  • Tomatoes – 2 medium, chopped
  • Coconut milk – 1 cup / 240 ml
  • Vegetable oil – 2 tbsp / 28 ml
  • Water – 1 cup / 240 ml
  • Salt – 1 tsp / 6 g
  • Black pepper – 1/2 tsp / 3 g
  • Thyme leaves – 1 tsp / 3 g
  • Cilantro – 1/4 cup / 15 g, chopped

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.
  2. Add curry powder and thyme, cook for another minute to release the aromas.
  3. Add tomatoes and cook until they break down, about 5 minutes.
  4. Pour in coconut milk and water, stirring to combine.
  5. Add the Hassar fish pieces, make sure they’re submerged in the liquid.
  6. Season with salt and pepper. Simmer for 25-30 minutes until the fish is cooked through and the sauce thickens.
  7. Garnish with chopped cilantro before serving.

Substitutions

  • Hassar fish -> Catfish or any firm white fish
  • Coconut milk -> Heavy cream or milk with a pinch of coconut extract
  • Cilantro -> Parsley
