Ingredients

  • lamb shoulder – 500 g / 1.1 lbs
  • olive oil – 2 tablespoons / 30 ml
  • onion, chopped – 1 large / 150 g
  • tomato paste – 3 tablespoons / 50 g
  • cumin – 1 teaspoon / 2 g
  • coriander – 1 teaspoon / 2 g
  • cinnamon stick – 1
  • chickpeas, soaked overnight – 1 cup / 200 g
  • water – 1.5 liters / 6 cups
  • salt – to taste
  • black pepper – to taste
  • parsley, chopped – 2 tablespoons / 8 g

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Introduce the lamb shoulder pieces, browning them on all sides.
  4. Stir in the tomato paste, cumin, coriander, and cinnamon stick, cooking for a couple of minutes until fragrant.
  5. Add the soaked chickpeas and water into the pot.
  6. Season with salt and black pepper to taste, stirring to combine.
  7. Bring the soup to a boil, then reduce the heat and simmer, covered, for about 1.5-2 hours or until the lamb and chickpeas are tender.
  8. Finish by stirring in fresh parsley before serving.
