Ingredients

  • bulgur wheat – 1 cup / 180 g
  • minced beef or lamb – 500 g
  • onion, finely chopped – 1 large
  • tomato paste – 2 tbsp
  • red pepper paste – 1 tbsp
  • allspice – 1 tsp
  • cumin powder – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley, finely chopped – 1/4 cup / 15 g
  • water – 1 cup / 240 ml

Instructions

  1. Soak the bulgur wheat in warm water until softened, about 10 minutes. Drain excess water.
  2. In a large bowl, combine the soaked bulgur, minced meat, onion, tomato paste, red pepper paste, allspice, cumin, salt, black pepper, and parsley. Knead the mixture until well-combined and smooth.
  3. Shape the mixture into small, tight meatballs using slightly moistened hands.
  4. In a large skillet, heat water and bring to a simmer. Add the meatballs and cook for about 20 minutes, or until the meatballs are firm and cooked through.
  5. Serve warm with a side of yogurt or a fresh salad.
