- turmeric powder – 1/4 teaspoon
- asafoetida (hing) – a pinch
- salt – to taste
- water – as needed for batter
- vegetable oil – for deep frying
Instructions
- Slit green chilies lengthwise without cutting them completely. Remove seeds if a milder taste is preferred.
- In a mixing bowl, combine besan, rice flour, cumin seeds, carom seeds, red chili powder, turmeric powder, asafoetida, and salt.
- Gradually add water to form a thick, smooth batter, ensuring no lumps.
- Heat vegetable oil in a deep frying pan over medium heat.
- Dip the chilies in the batter, coating them evenly, and gently slide them into the hot oil.
- Fry until golden brown and crisp, then remove and drain on paper towels.
