  • red chili powder – 1/2 teaspoon
  • turmeric powder – 1/4 teaspoon
  • asafoetida (hing) – a pinch
  • salt – to taste
  • water – as needed for batter
  • vegetable oil – for deep frying

Instructions

  1. Slit green chilies lengthwise without cutting them completely. Remove seeds if a milder taste is preferred.
  2. In a mixing bowl, combine besan, rice flour, cumin seeds, carom seeds, red chili powder, turmeric powder, asafoetida, and salt.
  3. Gradually add water to form a thick, smooth batter, ensuring no lumps.
  4. Heat vegetable oil in a deep frying pan over medium heat.
  5. Dip the chilies in the batter, coating them evenly, and gently slide them into the hot oil.
  6. Fry until golden brown and crisp, then remove and drain on paper towels.
  7. Serve hot with tamarind or mint chutney.
