Harak Osbao is a traditional Syrian stew known for its robust and sophisticated flavors. Ingredients
- Brown lentils – 1 cup / 200 g
- Small pasta shells – 1 cup / 150 g
- Yellow onion, finely chopped – 1 medium / 150 g
- Garlic cloves, minced – 3 cloves / 15 g
- Olive oil – 3 tbsp / 45 ml
- Pomegranate molasses – 1/4 cup / 60 ml
- Fresh cilantro, chopped – 1/2 cup / 25 g
- Ground cumin – 1 tsp / 5 g
- Salt – 1 1/2 tsp / 9 g
- Black pepper – 1/2 tsp / 2 g
- Lime juice – 2 tbsp / 30 ml
- Water – 6 cups / 1.5 L
- Pomegranate seeds (for garnish) – 1/4 cup / 40 g
- Crispy fried onions (for garnish) – 1/2 cup / 50 g
Instructions
- Rinse the lentils under cold water. In a large pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
- In a separate pan, heat olive oil over medium heat. Add chopped onions and sauté until golden, about 7-10 minutes. Stir in minced garlic and cumin, cooking for another minute until fragrant.
- Add the sautéed onion mixture, pasta shells, salt, and black pepper to the pot with lentils. Stir well and cook until pasta is al dente.
- Mix in pomegranate molasses and lime juice, adjusting seasoning to taste. Simmer the stew for an additional 5 minutes, allowing flavors to meld.
- Serve hot, garnished with fresh cilantro, pomegranate seeds, and crispy fried onions.
