Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Eggs – 3 large
  • Unsalted butter – 1/2 cup / 113 g
  • Water – 1 cup / 240 ml
  • Semolina – 1/4 cup / 45 g
  • Salt – 1 pinch
  • Sugar – 2 cups / 400 g
  • Lemon juice – 1 tablespoon / 15 ml
  • Water (for syrup) – 2 cups / 480 ml

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter over medium heat and add 1 cup (240 ml) of water. Bring to a boil.
  3. Remove from heat and stir in the flour and semolina quickly until a smooth dough forms.
  4. Let the dough cool slightly, then add the eggs one at a time, mixing well after each addition until fully incorporated.
  5. Shape the dough into small balls and gently press the center with your thumb to create an indentation resembling a navel.
  6. Place the pastries on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
  7. While pastries bake, prepare the syrup: In a separate saucepan, combine 2 cups (400 g) of sugar, 2 cups (480 ml) water, and lemon juice, bringing the mixture to a boil. Let it simmer for 10 minutes and then cool slightly.
  8. Once pastries are baked, pour the warm syrup over the pastries and let them soak for at least 30 minutes before serving.
