Hangzhou Spiced Soy-Sauce Duck, known locally as ‘Hangzhou Jiang Ya,’ is a culinary treasure from the scenic city of Hangzhou in China. This dish embodies the rich flavors of Eastern Chinese cuisine, renowned for its subtlety and harmony of sweet and savory tastes. Traditionally crafted with a luxuriant bath of aromatic spices and soy sauce, the duck emerges perfectly tender and infused with layers of captivating flavors that evoke the serene beauty of Hangzhou’s tranquil lakes and lush landscapes.

Ingredients

  • whole duck – 1 (about 1.5 kg / 3.3 lbs)
  • light soy sauce – 1 cup / 240 ml
  • dark soy sauce – 2 tablespoons / 30 ml
  • Shaoxing wine – 1/2 cup / 120 ml
  • brown sugar – 3 tablespoons / 45 g
  • ginger – 4 slices
  • green onions – 4 pieces, tied in a knot
  • star anise – 2 whole
  • cinnamon stick – 1 piece
  • water – 2 cups / 480 ml
  • vegetable oil – 2 tablespoons / 30 ml

Instructions

  1. Clean the duck thoroughly and pat dry with paper towels.
  2. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the ginger slices and green onions, cooking until fragrant.
  3. Introduce the Shaoxing wine, light soy sauce, dark soy sauce, brown sugar, star anise, and cinnamon stick to the pot.
  4. Carefully place the whole duck into the pot, turning to coat it with the sauce mixture.
  5. Pour the water into the pot, ensuring the duck is mostly submerged. Bring to a boil, then reduce to a simmer. Cover and cook for 1.5-2 hours, turning occasionally, until the duck is tender.
  6. Once cooked, remove the duck and let it rest for 10 minutes before carving. Serve with the cooking sauce drizzled over.

  • brown sugar -> granulated sugar with 1 tsp of molasses
