Ingredients

  • all-purpose flour – 2 cups / 240 g
  • unsalted butter, cold – 1 cup / 227 g
  • curing salt (for ham) – 1/2 tsp
  • water, cold – 1/2 cup / 120 ml
  • eggs – 2 large
  • Greek Feta cheese, crumbled – 1/2 cup / 100 g
  • thinly sliced ham – 1 cup / 150 g
  • dill – 1 tbsp, chopped
  • olive oil – 1 tbsp

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a bowl, combine the flour and cold butter, using your fingertips to create a breadcrumb-like texture. Mix in the cold water until a dough forms. Wrap and chill for 30 minutes.
  3. 3. Beat the eggs and mix with feta cheese, ham, curing salt, and dill.
  4. 4. Roll out the chilled dough to a thickness of 1/4 inch and cut into squares.
  5. 5. Place a tablespoon of the filling on each square, fold into a triangle, and seal the edges with a fork.
  6. 6. Brush each pastry with olive oil and bake for 20-25 minutes until golden brown.
  7. 7. Allow to cool slightly before serving.
