Ingredients
- Beef broth – 4 cups / 960 ml
- Potatoes – 1 lb / 450 g, diced
- Carrots – 2 large, sliced
- Leeks – 2, cleaned and sliced into rings
- Celery stalks – 2, chopped
- Smoked bacon – 4 oz / 113 g, diced
- Salt – to taste
- Black pepper – to taste
- Fresh parsley – for garnish, chopped
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
- Add the leeks, carrots, and celery to the pot, sautéing in the bacon fat until the vegetables are softened, about 5 minutes.
- Pour in the beef broth and bring to a gentle simmer. Add the diced potatoes.
- Season with salt and black pepper, adjusting to taste. Allow the soup to simmer for 20-25 minutes until the potatoes are tender.
- Return the bacon to the pot and stir.
- Serve hot, garnished with freshly chopped parsley.
