Gözleme is a traditional Turkish flatbread, known for its comforting and savory filling, encased within a golden-brown crispy exterior. Ingredients
- all-purpose flour – 3 cups / 375 g
- water – 1 cup / 240 ml
- olive oil – 2 tbsp / 30 ml
- salt – 1 tsp / 5 g
- feta cheese – 1 cup / 150 g
- spinach leaves – 3 cups / 180 g
- onion – 1 small, finely chopped
- black pepper – 1/2 tsp / 2.5 g
- lemon juice – 1 tbsp / 15 ml
Instructions
- In a large bowl, mix the flour and salt. Gradually add water and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Cover it and let it rest for 30 minutes.
- Meanwhile, prepare the filling by combining crumbled feta cheese, spinach, onion, black pepper, and lemon juice in a bowl.
- Divide the dough into 4 equal pieces. Roll each piece into a thin round circle about 10 inches in diameter.
- Place a portion of the filling on one half of each dough round, fold over to enclose, and press the edges to seal.
- Heat a non-stick skillet over medium heat and cook each gözleme for 3-4 minutes per side until golden brown.
- Serve hot, optionally with a wedge of lemon.
