Ingredients

  • all-purpose flour – 3 cups / 375 g
  • water – 1 cup / 240 ml
  • olive oil – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • feta cheese – 1 cup / 150 g
  • spinach leaves – 3 cups / 180 g
  • onion – 1 small, finely chopped
  • black pepper – 1/2 tsp / 2.5 g
  • lemon juice – 1 tbsp / 15 ml

Instructions

  1. In a large bowl, mix the flour and salt. Gradually add water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Cover it and let it rest for 30 minutes.
  3. Meanwhile, prepare the filling by combining crumbled feta cheese, spinach, onion, black pepper, and lemon juice in a bowl.
  4. Divide the dough into 4 equal pieces. Roll each piece into a thin round circle about 10 inches in diameter.
  5. Place a portion of the filling on one half of each dough round, fold over to enclose, and press the edges to seal.
  6. Heat a non-stick skillet over medium heat and cook each gözleme for 3-4 minutes per side until golden brown.
  7. Serve hot, optionally with a wedge of lemon.
