Ingredients
- Pork shoulder – 2 lbs / 900 g

- Lemon juice – 1/4 cup / 60 ml

- Thyme – 1 tsp / 1 g
- Paprika – 2 tsp / 4 g
- Salt – 1 tsp / 6 g
- Black pepper – 1/2 tsp / 1 g
- Pita bread – 4
- Tomato, sliced – 2
- Red onion, thinly sliced – 1
- Tzatziki sauce – 1 cup / 240 g
Instructions
- Slice the pork shoulder into thin strips, about 1/4 inch thick.
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper to create a marinade.
- Add the pork strips to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours or overnight for best results.
- Preheat a grill or skillet over medium-high heat. Cook the pork strips for about 5 minutes on each side until well-browned and cooked through.
- Warm the pita bread on the grill or in the oven.
- Assemble the gyros by placing pork strips in the center of each pita, followed by tomatoes, red onion, and a generous dollop of tzatziki sauce.
- Fold and serve warm.
