Originating from the central regions of Saudi Arabia, Gursan is a dish that has been cherished for generations, often served at family gatherings and celebrations. It represents the rich culinary heritage of the region, utilizing locally found ingredients to create a dish that’s both satisfying and flavorful.

Ingredients

  • Lamb shoulder – 2 lbs / 900 g
  • Onions – 2 large, chopped
  • Tomatoes – 3 medium, diced
  • Green bell peppers – 2, sliced
  • Garlic – 4 cloves, minced
  • Carrots – 2 large, sliced
  • Small eggplants – 2, cubed
  • Tomato paste – 2 tbsp / 30 g
  • Ground cumin – 1 tsp
  • Ground coriander – 1 tsp
  • Cardamom pods – 4
  • Cinnamon stick – 1
  • Bay leaves – 2
  • Salt – to taste
  • Black pepper – to taste
  • Vegetable oil – 2 tbsp / 30 ml
  • Thin unleavened bread (markook or similar) – 4 sheets
  • Water or beef broth – 5 cups / 1.2 L

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the garlic, tomatoes, and green bell peppers, and cook until the vegetables begin to soften, about 5 minutes.
  3. Stir in the lamb pieces, and let them brown on all sides.
  4. Add the tomato paste and mix well with the meat and vegetables.
  5. Incorporate the carrots and eggplants, stirring to combine.
  6. Season with cumin, coriander, cardamom, cinnamon, and bay leaves. Add salt and black pepper to taste.
  7. Pour in the water or beef broth, ensuring the ingredients are well covered. Bring to a boil, then reduce the heat to low and simmer, covered, for about 1.5 to 2 hours or until the lamb is tender.
  8. Tear the bread into small pieces and add it to the pot. Stir gently to incorporate it into the stew, allowing it to thicken the dish.
  9. Serve hot, garnished with fresh coriander if desired.
