Guriltai Shul is a traditional Mongolian noodle soup known for its hearty and warming qualities. Originating from the vast steppes of Mongolia, this dish has been a staple for nomadic families, providing sustenance and warmth during the harsh winter months. The soup combines tender chunks of meat, often mutton or beef, with handmade noodles, fresh vegetables, and a flavorful broth, all simmered together to create a dish that’s as nourishing as it is delicious.
Ingredients
- Beef or Mutton – 500 g / 1.1 lb, cut into bite-sized pieces
- Onion – 1 medium, diced
- Carrot – 2 medium, sliced
- Potato – 2 medium, peeled and diced
- Garlic – 4 cloves, minced
- Flour – 200 g / 1 1/2 cups
- Water – 6 cups / 1.4 L
- Salt – 1 tablespoon
- Black Pepper – 1/2 teaspoon
- Oil – 2 tablespoons
Instructions
- Heat oil in a large pot over medium heat. Add diced onions and garlic, sauté until soft.
- Add the meat and brown it on all sides.
- Pour in water and bring to a boil. Reduce heat, cover, and simmer for 30 minutes.
- In the meantime, prepare the noodles by mixing flour with a pinch of salt and enough water to form a firm dough.
- Roll out the dough thinly and cut into 1 cm-wide strips.
- Add carrots, potatoes, salt, and pepper to the pot. Continue to simmer for another 15 minutes.
- Drop the noodles into the pot and cook for an additional 10 minutes.
- Serve hot, garnished with fresh chopped herbs if desired.
