Ingredients

  • dried haricot beans – 1 cup / 200 g
  • dried butter beans – 1 cup / 200 g
  • pork belly – 1 lb / 450 g
  • onions – 2 large, chopped
  • carrots – 2 large, diced
  • bay leaves – 2 leaves
  • thyme – 1 teaspoon, dried
  • vegetable stock – 4 cups / 1 liter
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Rinse and soak the haricot and butter beans in water overnight.
  2. Drain the beans and place them in a large pot.
  3. Add the pork belly, onions, carrots, bay leaves, thyme, and vegetable stock to the pot.
  4. Season with salt and pepper, and bring to a boil over medium heat.
  5. Reduce to a simmer, cover, and cook for 3 hours, stirring occasionally.
  6. Check the seasoning, adjusting if necessary, before serving hot.
