Ingredients

  • all-purpose flour – 4 cups / 480 g
  • sugar – 1 cup / 200 g
  • unsalted butter – 1/2 cup / 115 g
  • eggs – 2 large
  • whole milk – 1 cup / 240 ml
  • active dry yeast – 2 1/4 tsp / 7 g
  • salt – 1/2 tsp
  • walnuts – 1 cup / 120 g
  • raisins – 1 cup / 150 g
  • rum – 2 tbsp
  • cinnamon – 1 tsp
  • lemon zest – 1 tbsp

Instructions

  1. In a small bowl, dissolve the yeast in warm milk and set aside until frothy, about 5-10 minutes.
  2. In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, eggs, and melted butter, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1-2 hours.
  5. Meanwhile, prepare the filling by soaking the raisins in rum and chopping the walnuts.
  6. Once the dough has risen, roll it out into a large rectangle. Spread the raisin and walnut mixture over the dough, then sprinkle with cinnamon and lemon zest.
  7. Roll the dough into a log and shape into a spiral, placing it in a greased round baking dish.
  8. Preheat the oven to 350°F (175°C) and bake for 45-50 minutes until golden brown.
  9. Let cool before serving to allow flavors to meld.
