Gringas are a popular Mexican street food that highlights the fusion of savory marinated pork with the creamy richness of melted cheese enclosed in a soft flour tortilla. This dish is believed to have originated in Mexico City and is traditionally served with a variety of toppings such as salsas, onions, and cilantro. Its name humorously suggests the idea of a ‘light-skinned’ taco, as the flour tortillas are lighter in color compared to their corn counterparts.
Ingredients
- Pork shoulder – 1 lb / 450 g
- Adobo sauce – 1 cup / 240 ml
- Flour tortillas – 8 pieces
- Oaxaca cheese, shredded – 2 cups / 200 g
- Fresh pineapple, diced – 1 cup / 165 g
- White onion, finely chopped – 1 medium / 150 g
- Fresh cilantro, chopped – 1 bunch / 30 g
- Lime, cut into wedges – 2
- Salt – to taste
- Black pepper – to taste
Instructions
- Marinate the pork shoulder in adobo sauce for at least 2 hours, preferably overnight.
- Preheat a grill or skillet over medium-high heat. Grill the marinated pork until fully cooked and nicely charred, about 8-10 minutes per side.
- Remove pork from heat and let it rest for 5 minutes before slicing thinly.
- On a preheated skillet, warm the flour tortillas. Add a generous amount of shredded Oaxaca cheese to one side of each tortilla.
- Layer sliced pork and diced pineapple over the cheese. Fold the tortillas in half to enclose the filling.
- Cook until the tortillas are golden and the cheese is melted, about 3-4 minutes per side.
- Serve immediately, garnished with chopped onion, cilantro, and lime wedges.
