Ingredients
- snakehead fish – 2 whole, cleaned and scaled (approximately 1–1.2 kg each)
- lemongrass – 2 stalks, bruised
- salt – 1 teaspoon
- green onion – 2 stalks, chopped
- fresh herbs – 1 bunch (mint, cilantro, and basil)
- rice paper – 12 sheets
- fish sauce – 1/4 cup / 60 ml
- lime juice – 2 tablespoons / 30 ml
- sugar – 2 teaspoons
- chili, sliced – 2
Instructions
- Prepare charcoal or a grill for medium-high direct heat.
- Score the fish at 2-inch intervals, rub with salt, and place lemongrass inside the cavity.
- Grill the fish over the charcoal for about 15-20 minutes on each side, or until the skin is crispy and the flesh is cooked through.
- Meanwhile, prepare the dipping sauce by mixing fish sauce, lime juice, sugar, and sliced chili in a small bowl.
- Serve the grilled fish with rice paper, fresh herbs, green onions, and the prepared dipping sauce. Wrap pieces of fish with herbs in rice paper and dip in the sauce.
