Ingredients

  • fresh mussels, clean and debearded – 2 lbs / 900 g
  • breadcrumbs – 1 cup / 120 g
  • fresh parsley, chopped – 1/4 cup / 15 g

  • lemon zest – 1 tablespoon / 6 g
  • extra virgin olive oil – 1/4 cup / 60 ml
  • salt – 1/2 teaspoon / 3 g
  • black pepper – 1/4 teaspoon / 1 g

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cleaned mussels in a large pot with a lid over high heat, cover, and cook for 3-5 minutes until they open. Discard any unopened mussels.
  3. Arrange the opened mussels on a baking tray, discarding the top shells.
  4. In a medium bowl, combine breadcrumbs, parsley, garlic, lemon zest, olive oil, salt, and pepper. Mix well to ensure the olive oil is distributed evenly.
  5. Spoon the breadcrumb mixture over each mussel evenly.
  6. Bake in the preheated oven for 10 minutes, or until the topping is golden brown and crunchy.
  7. Serve immediately with lemon wedges on the side.
