Gomme is a traditional Norwegian spread made from milk, sugar, and often flavored with spices or fruit. It originates from the rural areas of Norway, where it has been enjoyed for centuries as a special treat during festive occasions and everyday life. This creamy, sweet spread is typically served on bread or waffles and is cherished for its velvety texture and unique, comforting flavor.
Ingredients
- whole milk – 1 liter / 4 cups
- sugar – 200 g / 1 cup
- butter – 30 g / 2 tablespoons
- ground cinnamon – 1 teaspoon
- raisins – 50 g / 1/3 cup
- all-purpose flour – 30 g / 3 tablespoons
Instructions
- In a heavy-bottomed pot, combine milk and sugar. Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce heat to low and continue to simmer until the mixture reduces by half, approximately 1-1.5 hours. Stir occasionally to prevent sticking.
- Add butter, cinnamon, and raisins to the reduced milk mixture and stir well.
- In a small bowl, whisk the flour with a few tablespoons of water to create a smooth paste. Gradually add this to the simmering milk mixture, stirring continuously to prevent lumps.
- Continue to cook for another 15-20 minutes until the mixture thickens to a spreadable consistency.
- Remove from heat and let it cool slightly before serving. Gomme can be stored in the refrigerator and enjoyed cold or at room temperature.
