  • Dry white wine – 200 ml / 0.85 cups
  • Vegetable broth – 150 ml / 0.65 cups
  • Salt – 1 teaspoon / 5 g
  • Black pepper, freshly ground – 1/2 teaspoon / 1 g
  • Fresh parsley, chopped – 2 tablespoons / 8 g

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the minced garlic and chopped onion, sauté until the onion is translucent.
  3. Increase the heat to high and add the sliced mushrooms. Cook until they start to brown and release moisture, about 5-7 minutes.
  4. Pour in the white wine, stirring to deglaze the pan. Let it simmer for about 3 minutes to reduce slightly.
  5. Add the vegetable broth, salt, and pepper. Reduce the heat to medium-low and let it simmer for another 10-15 minutes until the mushrooms are tender and the sauce has thickened.
