Ginisang Munggo, a beloved dish from the Philippines, is a flavorful stew made from mung beans, often enjoyed during days of abstinence such as Lent or as a cozy rainy day comfort food. With roots deep in Filipino culture, this dish is known for its simplicity, hearty nature, and nutritious benefits. Traditionally served as a main course or side dish, it’s often paired with steamed rice or fried fish, making it a staple in many Filipino households.
Ingredients
- mung beans – 1 cup / 200 g
- water – 6 cups / 1.4 L
- pork belly – 200 g / 7 oz, cubed
- garlic – 4 cloves, minced
- onion – 1 medium, chopped
- tomatoes – 2 medium, diced
- fish sauce – 2 tablespoons
- spinach leaves – 2 cups / 60 g
- salt – to taste
- pepper – to taste
- oil – 2 tablespoons
Instructions
- Rinse mung beans under cold water. In a pot, combine them with 6 cups of water. Bring to a boil, then lower the heat to simmer for about 45 minutes, or until the beans are tender.
- In a separate pan, heat oil over medium heat. Add pork belly and cook until browned. Remove and set aside.
- In the same pan, add garlic and onion. Sauté until onion is translucent.
- Add tomatoes and continue to cook for another 3 minutes until veggies are softened.
- Stir in the fish sauce and return pork to the pan. Mix well.
- Combine pork mixture with cooked mung beans. Let it simmer for 10 minutes.
- Add spinach leaves and simmer for an additional 5 minutes. Season with salt and pepper.
- Serve hot with rice.
