Ingredients
- eggplant – 1 medium / 300 g
- zucchini – 1 medium / 200 g
- bell pepper – 1 large / 150 g
- tomatoes – 3 medium / 450 g
- onion – 1 large / 150 g
- carrots – 2 medium / 200 g
- potatoes – 2 large / 300 g
- green beans – 200 g
- olive oil – 3 tablespoons
- garlic – 3 cloves
- bay leaves – 2 leaves
- dried thyme – 1 teaspoon
- salt and black pepper – to taste
- water or vegetable broth – 2 cups / 480 ml
- parsley – a handful, chopped
Instructions
- 1. Prepare the vegetables: dice the eggplant, zucchini, bell pepper, and tomatoes; slice the onion and carrots; peel and cube the potatoes.
- 2. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
- 3. Add the carrots, bell pepper, and green beans, continue to sauté for 5-7 minutes until slightly softened.
- 4. Stir in the eggplant, zucchini, and diced tomatoes. Cook for another 5 minutes.
- 5. Add the potatoes, bay leaves, thyme, salt, and black pepper. Pour in the water or vegetable broth.
- 6. Bring the stew to a boil, then reduce the heat to low and cover. Simmer for about 30-40 minutes, stirring occasionally, until all vegetables are tender.
- 7. Adjust seasoning, if necessary. Remove from heat and garnish with chopped parsley before serving.
