Ingredients

  • Ruan fish (whole, cleaned) – 2 lbs / 900 g
  • Turmeric powder – 1 tbsp / 15 g
  • Lemongrass (crushed) – 2 stalks
  • Garlic (minced) – 4 cloves
  • Shallots (sliced) – 3 large
  • Bird’s eye chilies (finely chopped) – 3-5 (adjust for heat)
  • Tamarind paste – 2 tbsp / 30 g
  • Palm sugar – 1 tbsp / 15 g
  • Coconut oil – 2 tbsp / 30 ml
  • Salt – to taste
  • Banana leaves (optional, for wrapping) – a few

Instructions

  1. Prepare the fish by cleaning and scoring it lightly on both sides.
  2. In a bowl, mix together turmeric powder, lemongrass, garlic, shallots, chilies, tamarind paste, and palm sugar.
  3. Rub the spice mixture generously over the fish, ensuring it is well coated, and let it marinate for at least 30 minutes.
  4. Preheat your grill to medium-high heat. If using banana leaves, wrap the fish before grilling for an added aroma.
  5. Grill the fish for about 10-15 minutes on each side, until the flesh is opaque and flakes easily with a fork.
  6. Serve hot, optionally garnished with fresh herbs or a squeeze of lime.
