Geelrys, meaning ‘yellow rice’ in Afrikaans, is a vibrant, fragrant dish that hails from South Africa. Rooted in Cape Malay cuisine, this rice dish is infused with the warm hues of turmeric and sweet hints of cinnamon and raisins. Geelrys is traditionally served as a side dish, perfectly complementing the bold flavors of South African curries and braised meats. The recipe embodies a harmony of sweet and savory, offering a taste of South Africa’s rich culinary heritage.

Ingredients

  • basmati rice – 1 cup / 200 g
  • water – 2 cups / 480 ml
  • raisins – 1/4 cup / 40 g
  • turmeric – 1 tsp / 2 g
  • cinnamon stick – 1 stick
  • sugar – 1 tbsp / 12 g
  • salt – 1 tsp / 6 g
  • butter – 2 tbsp / 28 g

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine water, rice, turmeric, cinnamon stick, sugar, and salt.
  3. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 10 minutes.
  4. Add the raisins and butter, then cover again and continue to cook for another 10-15 minutes, or until the rice is tender and liquid is absorbed.
  5. Remove from heat and let stand covered for 5 minutes. Fluff the rice with a fork before serving.
